Jeeraka Kanji

There are many types of kanjis made in the time of Ramadan…………all makes in different styles…….this is and easy way of jeeraka kanji and tastes good……….



















Ingredients:

1c Basmati rice
4c Water
4 Cloves Garlic
½ tsp Turmeric powder
1c Grated coconut
1c Water
½ tsp Cumin seeds
3 Shallots
Salt


















Method:

1.Boil the rice with water,turmeric powder and slited garlic pods.
2.When the rice is cooked and the water is reduced off the flame.
3.Now grind the coconut,water,jeera seeds and cumin seeda to a medium thick paste.
4.Pour this to the rice mixture and just boil.Add salt as per taste.
5.Serve hot with pickles and papad.

This is an easy recipe this is called kunji pidi,kunji pathiri like that……this is rice balls in thick coconut milk and sugar.We used to make this spicy also the kunji pathiris we used to mix with chicken or meat curries also…….now I’m posting the sweeter version of kunji pathiri………….



















Ingredients:

1c Rice flour
1c Boiling Water
1½c Thick coconut milk
½ c Sugar or as required
1tsp Cardamom powder


















Method:

1.For rice balls boil the the water and add the rice flour to the water as mix well with a spoon.
2.Then knead well with hand.
3.Now make small balls out of the dough.
4.Steam this balls and keep aside.
5.In a pan heat the coconut milk with sugar and cardamom powder.
6.Add the steamed rice balls and boil the coconut milk till it thickens.
7.Serve slightly cooled.

Custard And Fruits Layered Pudding

This is an easy pudding……..just made like a triffle pudding with some fruits,biscuits and custard…..One of my relative bought a large amount of robust banana which doesn’t have a long shelf life…..so after 2 days it started ripening more so I was thinking what to make and at last I end up with this recipe…….in this I just used bananas a nd apple for fruits……..i thought of making banana pudding but didn’t have all the items for that so I made this easy pudding………



















Ingredients:
½ ltr Milk
4tbsp Custard powder
1tin Chilled evaporated milk
2 Bananas
1 Big apple
6 to 7 Digestive biscuits or as required for a layer
Sugar or condensed milk as your requirement
2 Sachet Dreamwhip powder
1tbsp Grated chocolate for topping


















Method:

1.From half litre milk take ½ c milk and dissolve custard powder in it and keep aside.
2.Boil the milk with sugar or condensed milk.
3.When the milk is boiled add the custard powder mix to the boiling milk and stir till it attains custard consistency.If u want more thickness for the custard u can add mor custard powder.
4.Keep aside to cool.
5.Now in a pudding dish pour half of the custard.
6.Keep a layer of biscuits dipped in evaporated milk.
7.On top of the biscuits keep a layer of roundly cut bananas.
8.On top of the bananas pour the rest of custard.
9.On top of that spread chopped apples and keep it for setting in the fridge.
10.Mean while whip the dream whip powder with chilled evaporated milk to a fluffy cream.
11.When the pudding is half set spread the dream whip on top of the apples and keep it back in the fridge for setting it full.
12.Set for almost 3 to 4 hrs.
13.After setting grate the chocolate over it.
14.Serve chilled.

Banana Fritters

Another easy snack with small bananas………..this is almost like apple fritters…..apple fritters are not an usual snack I make………I used to make with bananas only…..Bananas are my kids fav….they like any banana flavoured item.
My lil one is very much fond of bananas.This snack really have a great taste of banana………




















Ingredients:
4 to 5 Small ripe bananas(rasakadali or poovan pazham)
1c Maida
5tsp Sugar
1tsp Cardamom powder
½ tsp Baking powder
¼ tsp Baking soda
½ c Water
A pinch of salt
Oil for frying


















Method:
1.In a bowl mix all the ingredientsand mix well with hand.
2.Mash the bananas with hand well.And mix it to a thick batter.
3.Let it sit for 15 mins.
4.Now heat oil in a kadai.
5.Take a spoon full of batter and pour to the hot oil and fry till golden brown.
6.Serve hot.

Mughlai Chicken

This curry is almost the texture of butter chicken but tastes different………this curry have all the spices………this goes well with pulav and naan………..



















Ingredients:

1kg Chicken
3 Big onions
1 Big tomato
7 Cloves garlic
1 Medium piece ginger
1tsp Coriander powder
½ tsp Turmeric powder
1½tsp Kashmiri chilly powder
½ c Cashew nuts
2tbsp Oil
Salt
1tbsp Butter
½ tsp Kasoori methi
½ tsp Jeera powder
½ tsp Garam masala powder


















Method:

1.Clean the chicken well and keep aside.
2.Heat oil in a pan add the chopped onions and sauté till transparent.
3.Add the chopped ginger and garlic and sauté well till raw smell goes away.
4.Add the turmeric powder,coriander powder and kashmiri chilly powder and sauté well.
5.Add the chopped tomatoes and mix well till the tomatoes are soft.
6.Off the flame and allow this mixture to cool little bit.
7.When this is cooled blend them in a mixer to a paste.
8.Now heat the pan mix the chicken with the masala paste and a little water and cook covered.
9.Soak the cashews in water for 15 to 20 mins.And paste this cashews.
10.Whne the chicken is done add the cashew paste and mix well.
11.Off the flame.
12.Heat a small pan and add butter.
13.When butter is hot add the kasoori methi,jeera powder and garam masala powder and heat a little and pour this over the curry and mix well.
14.Serve hot with pulav or naan.

Vegetable Pulav

One more participation thank you card from akheela of torview………her round up was excellent with so many desserts at one place……..and seeing so much desserts was a great treat for the desserts lovers like me……….thanx a lot akheela........




After some snacks coming an easy rice item pulav………….which is healthy also, this doesn’t have much oil also……this pulav is really tasty with north indian style chicken curries……….my kids like different types of rice dishes…….so here comes easy vegetable pulav………



















Ingredients:

2c Basmati rice
1c Chopped carrots
1c Green peas(frozen)
4c Water
1 Big Onion
5 Cloves
5 Pods Cardamoms
2 Small stick Cinnamon
2 Bay leaves
1tsp Cumin seeds
10 Cashewnuts
Salt
2tbsp Oil


















Method:
1.Soak the rice for half an hour.
2.In a heavy bottomed vessel heat oil.
3.Add the cloves,cinnamon sticks,cardamom,bay leaves and cumin seeds and sauté well.
4.Add the chopped onions and cashews and sauté well.
5.When the onions are transparent add the chopped carrots and grean peas and mix well.
6.Add salt.
7.Drain the rice and mix well with the vegetables.
8.Pour the water and mix well.
9.Cook cover in medium flame till all the water evaporates.
10.Serve hot.

Stuffed Buns

Home made buns are really tasty and if it is stuffed then it is more tasty……….I used chicken stuffing for this buns……you can make sweet stuffings also……….at the time of baking it smells too good like a bakery……now to the stuffed buns…….


















Ingredients:

For Buns:

2c All purpose flour
2tsp Dry instant yeast
1c Milk
3tbsp Vegetable oil
2tsp Sugar
Salt
1 Egg beaten for brushing


For Stuffing:

2c Cooked shredded Chicken
1 Onion
1 Tomato
¼ tsp Turmeric powder
½ tsp Red chilly powder
1tsp Ginger garlic paste
½ tsp Garam masala powder

Salt
Oil


















Method:

1.Warm the milk and sprinkle the yeast and sugar in the milk.
2.Keep for 10 mins.
3.In a bowl mix all purpose flour and salt.
4.Slowly pour the milk yeast mixture to the flour and start kneading.
5.Add oil in between and knead well for 10 mins.
6.Keep this for rising for 1 to 1 ½ hrs.Cover it with wet cloth.
7.Now heat oil in a pan and add chopped onions ans sauté well.
8.Now add ginger garlic paste and sauté well.
9.Add the turmeric and redchilly powder and mix well.
10.Add the chopped tomatoes and mix well.
11.Add the shredded chicken and mix well with the masala and put garam masala powder and mix.
12.After the flour is risen punch down the dough and knead once more.
13.Take small balls out of the dough and flatten in the palm.
14.Place a spoon of filling inside the flattened ball and seal it properly.
15.Line up a baking tray with parchment paper and place the stuffed buns on it with the sealed portion facing down.
16.Cover the buns with cling film and allow it to rest for 45 mins to 1 hr.
17.Preheat the oven at 200 degree C for 20 mins.
18.Brush the buns with beaten egg.
19.Bake the buns at 175 degree C for 20 to 25 mins or till done.
20.Enjoy the stuffed buns.

Pazham Nirachathu

First of all congrats to akila of akila's kitchen for her successful event roundup....and I'm happy to be a part of it..........and she has sent a beautiful thank you card for all those who participated.Thanks akila for this card........




Now to the recipe........This is made with big platains(nethra pazham)………this is a tasty snack with filling and dipped in batter and fried………..In this we don’t cut the plantains into many pieces just a slit and will fill that portion with filling……….



















Ingredients:

3 Big plantains(Nethra pazham)

For Filling:

2c Grated coconut
¼ c Chopped cashew nuts
¼ c Raisins
½ c Sugar
2tbsp Ghee
For Batter:
Maida
Sugar
¼ tsp Turmeric powder
Water
A pinch of salt
Oil for frying


















Method:

1.Peel the plantains.
2.In one side put a slit and remove the seeds as much as you can.
3.In a pan heat ghee fry the cashews and raisins.
4.Add the grated coconut and mix well.
5.Add the sugar and mix well.
6.Now fill this mixture to the portion where we put the slit in the plantain.
7.In a bowl mix maida,sugar,water and salt and make a thick batter.
8.Heat oil in a kadai.
9.Now dip the plantains in the batter and cover it with the batter.
10.Fry it in hot oil till the outer and inner part is cooked.
11.Cut and serve hot.

Apple Fritters

Again one more apple recipe………apples are always left more in my fridge……..so have to finish it up without spoiling it.So making whatever I feel………..I used to make banana fritters this way but first time with apples……..banana fritters will be posting soon……..now we shall go to the recipe of apple fritters………


















Ingredients:

1 Big apple
1c Maida
½ c Sugar
1 Egg
½ c Water
¼ tsp Baking soda
½ tsp Baking powder
½ tsp Cinnamon powder
Oil for frying
Icing sugar for dusting


















Method:

1.In a bowl mix maida,sugar,egg,cinnamon powder,baking powder and baking soda and mix well with water into a thick batter.
2.Add chopped apples to this and mix well.
3.Heat oil in a kadai.
4.Now drop a spoon full of batter to the hot oil and fry till golden brown.
5.Fry all the fritters and dust with icing sugar.
6.Serve hot.

Bread And Fruits Pudding

This is easy and healthy pudding…………..there are fruits and nuts too in this.This can be steamed also but I baked this because I like baked items more than steamed.
Now we shall go to the recipe…………




















Ingredients:
3 Slices bread
½ ltr Milk
1 Egg
¾ tin Condensed milk
1 Plaintain(Nethra pazham)
1 Big apple
¼ c Chopped pistachios
¼ c Chopped badams
2tsp Desicated coconut




















Method:
1.Cut the bread into small squares.
2.Grease a bake tin.
3.Spread the pieces of bread in the tin evenly.
4.In a bowl mix milk,egg and condensed milk and beat well with a spoon.
5.Now add the chopped plaitains,chopped apples and chopped nuts in this milk mixture and mix well.
6.Now pour this milk mixture evenly all over the bread.
7.Put the desiccated coconut over this mixture.
8.Preheat the oven at 200 degree C for 10 mins.
9.Bake this at 180 degree C for 30 to 35 mins or it is done.
10.This can be steamed in a steamer also for 40 mins.
11.Allow it to cool and cut into pieces and serve.

Karanji

This is a north Indian dish mainly……….this is made with many types of fillings,sweet and spicy…………I made this with spicy chicken filling.We can make it with coconut sweet filling………in our place this is made in small,small shapes and it is called “Irachi vada”………



















Ingredients:
For Outer Covering:
1c Maida
¼ c Semolina
Salt
Water

For Filling :

1c Chicken cooked and shredded
1 Onion
1 Tomato
½ tsp Ginger garlic paste
¼tsp Turmeric powder
½tsp Red chilly powder
½ tsp Garam masala powder
1tbsp Oil
Oil for frying

Method:

1.Mix maida,salt and water and knead well to thick dough.
2.In a pan heat little oil.
3.Add chopped onions and sauté well.
4.Add ginger garlic paste and sauté well.
5.Add the turmeric powder and red chilly powder and sauté well.
6.Now add the chopped tomatoes and sauté well.
7.Now add the cooked chicken shredded and mix well with the masala.
8.Add garam masala powder and mix well.
9.Now make small balls out of the dough and roll into a small flat disc.
10.Place a little filling in a side of the flattened disc as bellow:


















11.Now close the filling with the other portion and seal the sides with hand.
12.Now it will look like a half moon shape.


















13.Heat oil in a kadai for frying.
14.When the oil is hot fry the karanjis into light brown and crispy.
15.Serve hot.

Thari Kanji

Thari kanji or semolina payasam……….this is more payasam than a kanji but it is called thari kanji……….in kerala this is a main dish for iftar…….Some makes this with coconut milk and temper with shallots………..but I make this with fresh milk and temper with cashews and raisins……….this is very easy and not much sweet as a payasam……..


















Ingredients:

½ ltr Milk
3tbsp Semolina
¼ c Thin roasted vermicelli
4tbsp Sugar
A pinch of salt

For Tempering:
1tbsp Ghee
10 Cashew nuts
10 Raisins


















Method:

1.Boil milk in a sauce pan.
2.When the milk is boiled add the semolina and if u need more thicker add more semolina.
3.When the semolina is cooked add the vermicelli and boil.
4.When this both are cooked add sugar and salt.
5.This should not be more sweeter as payasam.
6.Off the flame when it is done.
7.In a pan heat ghee roast the cashews and raisins and pour over the thari kanji.

Unnakai

This is a famous Malabar snack……..I really wonder the ladies in Malabar they spend their most of the time in kitchen………they are not at all lazy……their dishes are all of filling ones and all………after our marriage we went to one of my hubby’s friend’s house in mahe……..we reached there at 6 evening so it was tea time and there where more than 6 items I think……..we couldn’t taste the whole items before that we were full…..next dinner oh god it was like a party menu for both of us………all the pathiris and many curries………….That day we had to stay there because our place is very far away………..and I told I can’t eat any more……….breakfast really was a buffet………….what I prepare for one week we had to taste it in one whole day………….actually my stomach was like it would break now………hehe.Even now also I can’t forget those 1 and half day.The people over there like to cook and make others eat……….This is a very tasty snack……..just to handle it is a little problem but it is really awesome……….



















Ingredients:

4 Ripe plantains (Nethra pazham)
1c Grated coconut
½ c Sugar
½ c Chopped cashew nuts
¼ c Raisins
1tbsp Ghee
Oil for frying

Method:

1.Boil or steam the plaintains till soft.
2.Plaitains should be ripe but stiff.
3.Peel the skin of cooked plaintains and mash it with hand when slightly cooled.
4.In a pan heat ghee add chopped cashews.
5.When cashews are light brown add the raisins and coconut and mix well.
6.Add sugar and mix well.
7.Now take small balls out of mashed plaintains.
8.Grease your hands because this will be little sticky.
9.Just flatten a little with ur fingers keeping the plaintain inside the other palm.
10.Fill in the coconut mixture and close and roll in oval shape.
11.If it is more sticky you can even dust the hands with maida also.
12.Now heat oil in a kadai.
13.Deep fry this unnakais at medium heat till brown.

14.Serve hot with hot tea…………

Tropical Freeze or Coconut Pudding

Again an easy dessert on the way………….The easiest pudding with a rare name…………this was the first pudding I made after marriage it was a hit then and even now I used to make this……..just the setting time is there……..this is also an easy pudding but with a royal taste for guests without notice.To get it set fast u can even keep in freezer for sometime and then in the bottom part of the fridge……..




















Ingredients:

1tin Condensed milk
2tins Puck cream
3c Thick coconut milk
10grms Gelatine
¼ c Water
½ tsp Vanilla essence
2drops Red food color

For Topping:

Crushed Nuts or Biscuits


















Method:

1.In a steel cup soak gelatine in water and keep aside.
2.In a bowl add the condensed milk and cream and beat well with a spoon.
3.Now add the vanilla essence and mix well.
4.Add the coconut milk and beat well.
5.Now add the color.
6.Double boil the gelatine.
7.Mix the gelatine to the coconut milk mixture and bleand well with the spoon.
8.Pour this in a pudding dish and keep for setting for 4 to 5 hrs.
9.When set top with crushed nuts,biscuits or even some fruits.
10.Serve chilled.

Mutta Palada

This is an easy snack made usually during Ramadan………this is also best for unexpected guests…..very easy to make and tasty too……these are thin pancakes filled with coconut and nuts.In some places it is called “churul appam”………
Now we shall go to the recipe………




















Ingredients:

For Pancakes:

1c Maida
2 Eggs
Salt
Water

For Filling:

2c Grated Coconut
Sugar
¼ c Chopped cashewnuts
2tbsp Ghee


















Method:

1.In a bowl mix maida,eggs,water and salt and mix well till u get a thin pouring batter.
2.Heat a dosa pan apply a little oil and pour a large spoon of batter to the pan and swirl.
3.Cook the pancake till done.
4.Prepare the pancakes till the batter finishes.
5.In another pan heat ghee add the chopped cashews and fry till light brown.
6.Add the grated coconut and sugar and mix well.
7.Now take each pan cake fill the coconut mixture and roll the pancakes.
8.Have this mutta palada with hot tea.

Chocolate Coffee Cake

This cake will be a real treat for chocolate and coffee lovers like me…………..both chocolate and coffee are my favs…………..this cake I made for my small one’s birthday……the taste of chocolate and coffee was hmmmmmmmm………Now we’ll enjoy the chocolate coffee cake……



















Ingredients:

2c All purpose flour
1c Powdered sugar
2tsp Baking powder
1tsp Vanilla essence
2 Eggs room temp
1c Butter room temp
½ c Cocoa powder
2tsp Coffee powder
½ c Warm water

For Icing:

½ c Butter room temp
2c Icing sugar
½ c Cocoa powder
1tsp Coffee powder
¼ c Milk
Salt

For Decorating:

2 Sacthets dreamwhip powder
¼ c Cold milk


















Method:

1.Seive flour,baking powder and cocoa powder.
2.In a bowl mix butter and sugar and beat well.
3.Now add eggs one by one and beat well after each addition of egg.
4.Add vanilla essence and beat well.
5.Add the flour mixture and fold in with wooden spoon.
6.Mix coffee powder in warm water and add this coffee mixture into the flour mixture slowly.
7.Mix well .
8.Grease a cake tin and pour the batter ti the tin.
9.Preheat the oven at 200 degree C for 15 mins.
10.Bake this cake at 165 degree for 40 to 45 mins.
11.For icing mix butter,icing sugar ,cocoa powder and coffee powder and beat well.
12.Add milk little and a pinch so salt and make this to a spreading consistency.
13.Now after baking the cake allow the cake to cool completely.
14.Now cut the cake into two parts.
15.Spread a layer of icing in one portion and close with the other part.
16.Spread the rest on top and sides of the cake.
17.Keep this in fridge and let it set.
18.In a bowl beat dreamwhip and cold milk and beat well till fluffy.
19.When the cake is set decorate the cake with dreamwhip.
20.Enjoy a piece of sliced cake……….

Egg Fritters

"HAPPY INDEPENDENCE DAY" to all the Indians all over the world.......
Egg fritters are also made commonly for iftars……..its very easy and tasty……..the filling also is lil spicy so no need of another sauces to have these.This can be dipped in besan mixture or maida mixture…..I mostly use maida mixture to coat this.
Now we shall go to the recipe…….




















Ingredients:

4 Eggs
1 Big onion
1 Tomato
¼ tsp Turmeric powder
½ tsp Chilly powder
Salt
Oil
Oil for frying

For Coating:

Maida
Salt
Water


Method:

1.Boil the eggs till fully done.
2.When the eggs are little cooled remove the shell and cut into half.
3.Seperate the yellow yolks from the egg whites.
4.Now in a pan heat little oil and add the chopped onions.
5.When the onions start changing color add the turmeric powder and chilly powder.
6.Now when the raw smell of the powders are gone add the chopped tomatoes.
7.When the tomatoes are soft add the removed egg yolks to the mixture and mix well.
8.Off the flame and allow it cool a bit.
9.Now fill this mixture to the egg white holes as seen below:



















10.Now make a thick batter of maida,salt and water.
11.Now coat each egg in this batter with a spoon.
12.Heat oil in a kadai and put each coated eggs in the hot oil and fry till the outer cover is crispy.Keep the oil in medium flame.
13.Be careful while frying any part of the egg white touches the hot oil it will splutter a bit so be sure to coat well.
14.Serve hot.

Arrowroot Pudding

This is an easy and almost healthy pudding…………for arrowroot powder in Malayalam we call it as “koova”…….it has some medicinal value also……….for stomach upset we used to have this with milk boiled like a sauce…….this give cooling effect to the body……..so in Ramadan this is a good pudding to have at the time of iftar…………



















Ingredients:

½ ltr Milk
3 to 4 tbsp Arrowroot powder
1tin Condensed milk or sugar
½ tsp Vanilla essence
Digestive biscuits
½ c Warm black coffee

For Topping:
Chocolate sauce
Crushed nuts
Crushed biscuits or Chopped fruits


















Method:
1.Mix milk,condensed milk,arrowroot powder and vanilla essence and keep the pan on medium flame and keep on stirring till the mixture gets thicken like a custard.
2.If u want to make the sauce little more thick u can add 1 spoon more arrowroot powder.
3.Let it cool at room temp.
4.In a pudding dish layer the biscuits dipped in coffee.
5.On top of the biscuits pour the arrowroot mixture.
6.Keep it for setting for 3 to 4 hrs in the fridge.
7.When set top of with your desired topping.
8.I used chocolate syrup,nuts and crushed biscuits.Can even use fresh chopped fruits also.
9.Enjoy the healthy arrowroot pudding.

Ulli Vada/Pakoras/Onion Bajji

HI everyone…….hope all had a wonderful day yesterday………hope ur iftar was great and always praying for that.Now I’ll be trying to post more iftar dishes this month………..hope that will help many.This vadas are very oftenly made for iftar…..my hubby needs this for iftar.And he love to have this with a hot tea in a rainy day………when it rains he say “faji make some ulli vada with a hot tea”………this is very easy and tasty also………
Now have crispy ulli vadas……..




















Ingredients:

4 Medium onions
1 Small piece ginger
4 Cloves garlic
3 Green chillies
¼ c Corianderleaves chopped finely
¼ tsp Turmeric powder
¼ tsp Redchilly powder
3tbsp Besan flour
2tbsp Maida
1tbsp Rice flour
Salt
¼ c Water
Oil for frying


















Method:

1.In a bowl mix thinly sliced onions,finely chopped ginger,garlic,green chillies,coriander leaves and the other ingredients.
2.Mix well with hand and let it sit for 10 mins.
3.Heat oil in a kadai.
4.Now take small parts from the vada mixture and drop to the hot oil ,while dropping the mixture to the oil the heat should be in medium.
5.Fry the vadas in medium heat till it becomes light brown and crispy.
6.Serve hot with any sauce or have as it is.

Now coming to the smoothies…….these smoothies give a soothing effect to the body after fasting for several hours………the climate is also soooo hot that we have to take more fruits and juices at the time of iftar(time of breaking fast).
So I thought I’ll post some easy smoothies today……..and once again Ramadan Kareem and may Allah shower his blessings on all of us……..


Strawberry Milk


















Ingredients:
1 Small packet fresh strawberries
½ ltr Milk
Cold Water
Sugar to taste
Ice cubes(optional)
Method:
1.Wash and clean the strawberries.
2.In a blender put all the ingredients.If the milk and fruit is cold no need of ice cubes.
3.Blenb everything till a smooth juice is obtained.
4.Pour into large glass and serve.


Papaya Smoothie




































Ingredients:
Ripe papaya pieces
½ ltr Milk
Cold water
Sugar to taste
Ice cubes(optional)

Method:

1.Peel the papaya and deseed and cut into chunks.
2.In a blender put all the ingredients.If the milk and fruit is cold no need of ice cubes.
3.Blenb everything till a texture of smoothie is obtained.
4.Pour into large glass and serve.


Pears Chikoo Smoothie





































Ingredients:

1 Large pears
5 Small chikoos
½ ltr Milk
Cold water
Sugar to taste
Ice cubes(optional)

Method:

1.Peel the pears and chickoo,deseed it and cut into pieces.
2.In a blender put all the ingredients.
3.As chikoo is very sweet fruit add sugar very carefully.
4.Blend everything into very smooth.Till u get a smoothie.
5.Serve in long glasses.
